The former Trattoria Da Vinci space in Lowertown St. Paul won't be empty for long - a new, more modern, yet still rustic, Italian restaurant is moving in. The restaurant, to be called Parco 400, will be helmed by chef Troy Unruh, a St. Paul native who spent 12 years working in New York City under big-name chefs like Mario Batali and Eric Ripert.
"The menu is a combination of foods that people can quickly identify with, and some things for the foodies," Unruh said. He said there will be plenty of approachable classics, from a bruschetta section where the toast arrives separately and the toppings in bowls meant to be shared as an appetizer, to hand-rolled pastas (no extruders in Unruh's kitchen), to meat and fish entrees.
