The Bootlegger Italian Bistro appears on nearly every list of top classic Italian restaurants in Las Vegas, but now in addition to timeless classics, the restaurant is serving up gluten-free, paleo-friendly (lean meats, fruits and vegetables, nuts and seeds) and other healthy Italian options for guests on restricted diets or those choosing a healthier lifestyle.
“We have been serving our gluten-free specialties for some time,” noted Ronnie Mancuso, vice president and chief operating officer for The Bootlegger. “The gluten-free pizza is very good and very popular, however I went on a Paleo diet about a year ago and lost almost 50 pounds, so recently asked the chef to create several paleo-friendly dishes as an option for both myself and our guests.”
