Read almost any article on healthy eating and it will tell you: If you want to clean up your diet, cook at home and don't eat out. Wily restaurant chefs are using unhealthy tricks that you can't even fathom to make their food taste great.
But chef Marco Canora is out to change that. "There's a lack of transparency in the restaurant industry," Canora says. "As a consumer, I could know more about my food choices shopping at a supermarket full of processed foods than I can eating dinner [at a nice restaurant]."
