The traceability system of Mozzarella di Bufala Campana PDO is unique in Italy and in Europe. It is able to guarantee that the raw material used for the production of buffalo mozzarella is 100% fresh whole buffalo milk, coming from buffaloes bred only in specific areas of Italy which are the ones foreseen by the PDO specifications.
This traceability system is the result of the joint work of the Istituto Zooprofilattico Sperimentale del Mezzogiorno (Zooprophylactic Institute of Southern Italy), the Italian Ministry of Agriculture, DQA Certifications, and the Consortium for the protection of Mozzarella di Bufala Campana PDO.
