Italy’s quintessential Easter dessert, the Colomba is a traditional dove-shaped cake known for its soft texture and sweet almond flavor. According to popular legend, it was brought as a gift to King Alboin following the conquest of Pavia on the day of Pasqua in 572 AD, and was so light and delicious that he freed his enslaved and declared the dove — and the cake — a symbol of peace and renewal.
