Sandwiches worth crossing Italy for: from Palermo to Piedmont

Italian sandwiches are more than the ubiquitous panini we find in almost every café around the world (but not in Italy). In reality, il Belpaese has an enormous regional sandwich culture, and many of its best are connected so closely to specific towns and local habits that they barely exist outside their place of origin.

Some became famous nationwide, and you are certainly familiar with them, at least by name:   Florence has the panino al lampredotto, filled with thin slices of slow-cooked tripe and bright green salsa verde.
