Every year, the Bomporto (Modena) plant of Chicago-based bakery East Balt processes 14,000 tons of wheat, 60% of which come from local crops. The wheat then gets turned into some 200 million sandwiches served by McDonald's in their 520 restaurants throughout Italy.
"Our goal is now to take that 60% up to 100% and only work with locally sourced crops, since having a short production and distribution chain increases control over the process and improves quality," said Tommaso De Marco, General Manager of East Balt's Italian subsidiary, East Balt Italia.
