How could we skip Sicily on our trip around Italy exploring pizzas, focaccia and piadine? Not a chance. When talking about traditional specialties, the challenges between Palermo, Catania and Messina are displayed once again… three in particular spring to mind; the sfincione palermitano, the scacciata catanese and the focaccia messinese.
The nuns invented it
Let's start with the sfincione palermitano, symbol of local street food along with the legendary "pani câ meusa". It’s a type of pizza by the slice born as a very poor Christmas dish, nothing more than an attempt to enhance the usual bread, so called "pane schittu" (without toppings).
