Whether the industry is pizza or piano repair, the combination of fast service and high quality is one of the most difficult balances to strike. Persona Wood Fire Pizza, a fast-serve gourmet pizza franchise, seems to be walking the line just fine as it opens its first Texas location this week on the Beltway 8 divide between Humble and North Houston.
The brainchild of California-raised, Napoli-trained chef Glenn Cybulski, Persona cranks out thin, Neopolitan-style pizzas that are big on homemade freshness in about 90 seconds. The key is a wood-fire pizza oven that reaches temperatures of around 1,000 degrees and a fresh dough recipe that bakes fast without burning, due to an ultra-fine flour and a lack of sugar or oils.
