Now Open: Stella Artisan Italian in Ridgewood

How it started: When Vincent Forchelli happened upon an online posting by Tim Hanley and Rocco Trisolini, owners of S. Egidio pizza in Ridgewood, seeking a chef to open an artisanal Italian sandwich shop, he was intrigued.

But after Forchelli, who worked as a sous-chef at Landmarc Restaurant in the Time Warner Center in Manhattan and Hudson Water Club in Rockland County, met with the nephew-and-uncle team, the idea for Stella Artisanal Italian morphed quickly, especially when Forchelli brought on former co-worker and acclaimed Manhattan pastry chef Heather Bertinetti Rozzi. The project, located in the first Due spot on Ridgewood Avenue, came together within a few months.
