
Genoa has officially obtained recognition as "City of Cheese 2023" by the National Organization of Cheese Tasters. What earned Genoa the title of "City of Cheese" was above all the prescinsêua, a product little known beyond the Ligurian borders but which boasts a history rich in noble traces and still stands as the absolute protagonist in the preparation of the many savory pies of the regional cuisine.
The history of this cheese is little known beyond Ligurian borders. Pantaleone da Confienza, in his Summa dei latticini, reported that Genoa traded in caci tome e prescinsêua. The art of Genoese cheesemakers in 1700 in Sottoripa cited prescinsêua as one of the cheeses that was most traded. Prescinsêua has a noble past: it is said to have been the only gift deemed worthy of the Doge in the days of the Superba.
