Two new Ethan Stowell dining experiences, Bombo Italian Kitchen and The Bar at Bombo, are set to open June 20 in the Seattle Convention Center's Summit Building. Summit opened in Seattle in January and is the U.S.'s first high-rise convention center. Bombo Italian Kitchen’s storefront opens directly into the convention center lobby and offers all-day dining.
The space was designed by Graham Baba Architects, which used terracotta tiles, hand-baked glazed tiles, walnut bar tops, and white oak banquettes to complete the look, according to a recent release. Breakfast at Bombo Italian Kitchen specializes in savory Brizzas (i.e., 5-inch personal breakfast pizzas), though sweeter options — like Brizzas with toppings like Nutella, mascarpone, and berry jams — are available, too.
