Italian, with verve. I was barely through my first plate from the $15 all-you-can-eat buffet at Martino's Market in Hackensack and already the questions were piled up in my head: How did this chicken Parmigiana become so tender? Who made this sausage that brims with fennel seeds in every bite?
What gave this ordinary-looking zucchini pie such lively flavor? Most of all: How does this family, led by Sicilian immigrants Vincenzo Martino, 82, and his wife Concetta, 76, cook with such vigor and present their scratch-made food with such enthusiasm after more than three decades of owning their tiny market?
