Rustic Plate: The Americanization of fettuccine Alfredo

A recent email got me humming Louis Armstrong's "Nobody Knows the Trouble I've Seen." It was from a friend asking me to refer him to a winning fettuccine Alfredo recipe. Intent on romancing his lovely bride, he was looking for a delicious version of this creamy pasta dish and thought of me, he explained, because I am Italian. I am going straight to the source, I recall him writing.

Normally, I reply to a recipe request almost immediately, excited by the person's enthusiasm to create something special at the stove. On this occasion, however, it took me a whole day to respond because I found myself in the familiar pickle of being credited with knowledge I don't possess simply because I was born in Italy.
