Sarà a Rye, nel Westchester, e porterà avanti la formula di successo che lo chef napoletano ha già collaudato nella Grande Mela: una cucina vera, autentica, prodotti di qualità, attenzione alle materie prime e sopratutto grande passione e rispetto per il cibo e per i clienti.
Diploma da ragioneria e mani da chef, Raffaele si forma nelle macellerie e pescherie di famiglia, che diventano le sue palestre di vita umana e professionale. Ma è la mamma la sua più grande maestra che gli ha insegnato a fare la pasta fresca e alla quale ancora oggi cerca di rubare qualche segreto di cucina.
