Opening a new restaurant in New York City is a major feat in its own right. For restaurateur Paul Shaked and chef Adam Leonti, opening their latest Mulberry Street project, Sofia’s, during and unforeseen pandemic meant utilizing their expertise and creativity to both survive and feed hungry New Yorkers in the safest and most comforting way possible.
FlourLab co-author, former owner of Leonti and Vietri alum, chef Adam Leonti, shares what he’s cooking up at Sofia’s, as well as how he and Paul have pivoted during this trying time.
