The steakhouse, an American institution, is almost synonymous with Charlie Palmer, one of the most highly regarded American chefs and a pioneer of progressive American cooking. Now Palmer has created a new concept dining with AperiBar, a chic Italianesque restaurant and cocktail bar which just opened near Times Square, opposite Bryant Park on the ground floor of the LUMA Hotel Times Square.
Palmer has shifted from rich juicy steaks to a European way of eating, using the freshest Italian ingredients available, from imported buffalo mozzarella and olive oil to Caputo flour. The word AperiBar is derived from the Italian word aperitivo, an Italian tradition which usually takes place after work and includes enjoying a cocktail or glass of wine with light appetizers.
