Teresa E. Regina likes to attend the Taste of Italy festival at Our Lady of Mount Carmel Parish in Springfield because she sees many friends from years ago, and while they enjoy “wonderful food” they share stories of what has occurred in their lives since they last met.
Wonderful food? Individuals and businesses will provide the more than 40 favorite Italian main and side dishes will include ricotta ravioli, lentil soup, gnocchi, chicken cacciatore, eggplant rolatini, eggplant parmigiana, polpetti di risotto, frittelle di fiore, ziti/meatballs, shrimp scampi, Italian wedding soup, polenta and meat sauce, Sicilian lasagna, insalata di baccala, sausage grinders, insalata di calamari, linguini con vongole (clams), tortellini/antipasto salad and meatball grinders.
