The Rosenberg’s Bagels team is opening an East Coast-style Italian deli in December

Before Rosenberg’s Bagels & Delicatessen took over the city’s bagel scene, and before Famous Original J’s was just a pizza-y glimmer in owner Josh Pollack’s eye, he envisioned Lou’s Italian Specialties. But Rosenberg’s did take over the bagel scene, and — come on — Pollack really wanted a slice of New York-style pizza, so Lou’s just had to wait. 

But the wait is nearly over for the super-traditional, East Coast-style Italian deli and market from Pollack and the rest of the Rosenberg’s team: Lou’s Italian Specialties will open in the Cole neighborhood on Dec. 11. “It didn’t exist out here,” Pollack said of why opening the deli/market was so important to him. That same rationale is what led him to open Rosenberg’s and Famous Original J’s, too. “It’s all the stuff I missed out here — bagels, walk-up window slices, chicken parm. Denver needs it, and they don’t even know how bad they need it.”
